Description
Elevate your summer barbecues with this zesty grilled corn slathered in a creamy sauce and topped with cheese and spices.
Ingredients
Scale
- 4 ears of corn, husked and cleaned
- ½ cup of mayonnaise
- ½ cup of sour cream (or Greek yogurt)
- 1 teaspoon of chili powder
- ½ cup of crumbled Cotija cheese (or feta)
- Fresh lime juice
- Salt and pepper, to taste
- Chopped cilantro (optional)
Instructions
- Grill that corn! Fire up the grill and throw those ears of corn on there, turning every 2-3 minutes until they get gloriously charred. About 10-15 minutes should do the trick!
- Mix the creamy goodness. In a bowl, combine your mayonnaise, sour cream, chili powder, and a generous squeeze of lime juice. Stir like you’re summoning flavor magic!
- Slather it on. Once the corn is grilled to perfection, roll those bad boys in your creamy mixture. Go ahead, be a little generous here—no need to hold back when it comes to flavor!
- Add the cheese (and everything nice!). Sprinkles of Cotija cheese and a pinch of salt and pepper to tickle your taste buds. Top it off with a sprinkle of cilantro and more chili powder if you’re feeling daring.
- Dig in! Grab a napkin and get ready for some serious flavor. Caution: may cause uncontrollable happiness.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave with a splash of lime juice.
