Description
A delightful Spanish-inspired soup filled with comforting potatoes and zesty chorizo, perfect for warming up on chilly days.
Ingredients
Scale
- 2 tbsp Olive oil
- 1 Onion, diced
- 3 cloves Garlic, minced
- 200g Chorizo (beef-based), sliced
- 3 Potatoes, cubed
- 4 cups Vegetable broth (or chicken broth)
- 1 tsp Paprika
- 1 tsp Cumin
- Salt, to taste
- Pepper, to taste
Instructions
- Sizzle it up! Heat a splash of olive oil in a large pot over medium heat. Toss in diced onion and sauté until they’re oh-so-transparent, about 5 minutes.
- Garlic power! Add minced garlic and sauté for just a minute until fragrant.
- Chorizo time! Add the chorizo and cook until browned.
- Potato bonanza! Add cubed potatoes and stir everything well.
- Liquid gold. Pour in the broth and sprinkle the paprika and cumin. Bring to a gentle boil, then reduce heat and let simmer for about 20 minutes.
- Season to perfection with salt and pepper to taste.
Notes
For extra creaminess, mash a cup of cooked potatoes back into the soup. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
