Description
A light and zesty shrimp and cucumber salad, perfect for hot days or entertaining guests. This dish combines fresh flavors and a creamy dressing for a delightful summer treat.
Ingredients
Scale
- 1 lb Shrimp, fresh or frozen, peeled
- 2 English Cucumbers, sliced
- 1 Red Onion, thinly sliced
- 2 tbsp Fresh Dill, chopped
- 1/2 cup Greek Yogurt
- 2 tbsp Lemon Juice
- 2 tbsp Olive Oil
- Salt and Pepper, to taste
Instructions
- Prep the shrimp! If they’re frozen, toss them in a bowl of cold water until they’re thawed. If they’re fresh, give them a quick rinse.
- Sauté the shrimp: Heat a drizzle of olive oil in a skillet over medium heat. Toss those shrimp in for about 3-5 minutes until they turn pink and glorious.
- Chop the cucumbers: Slice ‘em up with enthusiasm!
- Mix it all together: In a large bowl, combine cooled shrimp, cucumbers, thinly sliced red onion, and fresh dill.
- Make the dressing: Stir together Greek yogurt, lemon juice, a touch more olive oil, and a sprinkle of salt and pepper.
- Toss it well: Ensure everything gets good coverage and shake your salad like you mean it!
Notes
Serve chilled over leafy greens or enjoy as a stand-alone dish. Perfect for barbecues or picnics, but avoid dressing until serving to keep it fresh.
