Description
A creamy, comforting loaded potato soup with gooey cheese and crispy toppings, perfect for chilly nights.
Ingredients
Scale
- 5 medium-sized Potatoes
- 2 tablespoons Butter
- 1 Onion, diced
- 2 cloves Garlic, minced
- 4 cups Chicken or Vegetable Broth
- 1 cup Heavy Cream
- 1 cup Cheddar Cheese, shredded
- Chives, chopped (optional)
- Salt and Pepper, to taste
Instructions
- Sauté the veggies: In a large pot, melt your butter over medium heat. Add the diced onions and let them sizzle until they’re softened, about 5 minutes. Add the garlic and cook for an additional minute.
- Add the potatoes: Stir in the diced potatoes and pour in your broth. Bring it to a gentle simmer, cover, and let it bubble away for about 15-20 minutes, or until those potatoes are nice and tender.
- Blend it up: Once the potatoes are soft, blend the soup using an immersion blender or a regular blender in batches.
- Creamy goodness: Pour the blended soup back into the pot and stir in the heavy cream and shredded cheese. Let it combine for about 5 minutes on low heat and season with salt and pepper.
- Top it off: Serve hot, garnished with extra cheese, crispy bacon or your favorite toppings.
Notes
