Description

A delightful one-pan meal featuring crispy potatoes, seasoned ground beef, and melty cheese, drizzled with zesty BBQ sauce.

Ingredients

Scale
  • 2 cups Yukon Gold potatoes, diced
  • 1 lb lean ground beef (80/20)
  • 1 cup BBQ sauce
  • 1 medium onion, diced
  • 1 cup cheese (cheddar or Monterey Jack)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt, to taste
  • Pepper, to taste
  • Oil, for cooking

Instructions

  1. Sizzle those spuds: Start by heating up your skillet and adding some oil. Toss in diced potatoes, sprinkle with salt, and cook until they’re golden brown and crispy for about 10-15 minutes.
  2. Meet the beef: Once the potatoes are crispy, push them to the side and add the ground beef. Cook until beautifully browned, breaking it apart.
  3. Add onion & spices: Incorporate the diced onion, garlic powder, paprika, salt, and pepper. Stir until the onions become translucent.
  4. Pour in the BBQ sauce and mix. Let it simmer for a couple more minutes.
  5. Sprinkle the cheese over the top, cover the skillet, and let it melt into a gooey goodness.

Notes

Serve directly from the skillet or with coleslaw and avocado slices for an added twist. Leftovers can be stored in an airtight container for up to 4 days.
